Catherine Gosselin’s Chili

Ingredients

Serves 4-6
2 Tbsp Pastene Extra Virgin Olive Oil
1 lb ground beef
1 onion, chopped
2 bell peppers, diced
1 cup frozen corn
1 can black beans, drained and rinsed
1 650ml jar Pastene Marinara Sauce
¼ cup Pastene Ketchup
1 cup water
1 tsp Worcestershire sauce
1 Tbsp brown sugar
1 tsp chili powder
¼ tsp smoked paprika
1 bay leaf
salt and pepper to taste

Directions

Prep time: 15 minutes | Cook time: 1 hour | Resting time: 15 minutes

  • Heat the olive oil on medium and cook the onions and peppers for about 2 to 3 minutes. Add the beef and cook until browned, 5 to 7 minutes.
  • Add beans, corn, tomato sauce, ketchup, water, Worcestershire, brown sugar and spices.
  • Reduce the heat to low heat and simmer for an hour, covered. 
  • Remove from the heat and allow the chili to rest for 15 minutes.
  • Enjoy topped with with sour cream and grated cheddar cheese.
